I love breakfast.
Savory. Sweet. Early. Late. Greasy. Clean. The whole menu. I love it all. I have the hardest time deciding when we go out for brunch and usually prefer to go with people who understand when I want to order two things. Because who can say no to crepes when they’re on the menu? And how is one to decide between waffles and eggs benedict? Or French toast and the quiche du jour? A flaky croissant and quality steel cut oatmeal? I’ll have one of each, thanks, with a side of bacon, please.
Mother’s Day is a big day for brunch people and we’ll be counted among them this year. We’ve gone out the last few years but are no strangers to staying in and enjoying a feast at home. (I often prefer it.) So, if Sunday you find yourself at home, I thought I would share my all-time favorite waffle recipe with you and a few other breakfast favorites I both have and love, and don’t have but am coveting.

Has your family started any traditions around Mother’s Day? (Food or otherwise?) The quintessential breakfast-in-bed scene, where everyone piles in has always seemed so dreamy to me. If you have one, I beg you! Indulge me with a story (or a recipe!) around breakfast. I would love it. xo
Goodnight Waffles
(from Waring Pro – maker of my waffle iron)
You have to make the batter the night before (hence, the Goodnight part)
P.M.
- 1/2 cup warm (105°- 110°F) water
- 1 tablespoon sugar
- 2 1/4 teaspoons active dry yeast (one packet)
- 2 cups whole milk, warm (about 105°F)
- 1/2 cup unsalted butter, melted and cooled
- 1 teaspoon salt
- 2 cups unbleached, all-purpose flour
A.M.
- 2 large eggs, lightly beaten
- 2 teaspoons vanilla extract
- 1/4 teaspoon baking soda
The night before…
Combine the warm water, sugar and yeast. Let stand 10 minutes until foamy. Stir in the warm milk, melted butter and salt. Beat in the flour until smooth.Wrap bowl tightly with plastic wrap and let stand overnight (or for 8 hours) on the countertop; do not refrigerate.
The next morning…
While the waffle maker is heating, stir the eggs, vanilla extract and baking soda into the batter. Pour onto waffle grids. Sprinkle in some chocolate chips, if you so please. Close the lid and prepare for your life to change.

Breakfast is *the* best. Jake’s been wanting a belgian waffle maker for ages so I might just have to get him one for Father’s Day. He’s the cook so I’d never ask for it for Mother’s Day… but maybe that’s a selfish gift since I’d be buying it for him to make food for me. 😛 Love your list of favorites!
